Wilted Tomato Salad

Recently I have been making a lot of salads for lunch and dinner and am always looking for ways to make them better.
Usually my salads just aren't that great. They taste the same as everyone else's. But this time I was able to create something a bit more exciting than usual!

Wilted Tomato Salad


1/2 cup cherry tomatoes halved
1 clove of garlic
1/4 cup balsamic vinegar
Pinch of granulated sugar
Your favorite salad greens (I used basic spring greens)
2 oz. sharp white cheddar cheese
2 strips of crispy bacon crumbled
One Slice of roasted turkey sliced into small strips
Drizzle of extra virgin olive oil

There is only one cooking step in this, so it's super easy! In a small saucepan on medium heat, put the tomatoes in until they start to soften.
Then you add in the garlic, let it sauté just a few seconds to keep it from burning.
Add the vinegar and sugar and let it simmer until it thickens. Then, you can set it aside to cool just a bit. You only want a warm salad not hot.

Now it's time to put it all together!
on a large plate lay your greens. Top them with the cheese, turkey and bacon crumbles.
I then do a small drizzle of olive oil just for flavor.
The last thing is to add your tomatoes. You can add as much of the liquid as you like. This would count as the dressing so keep that in mind!

This was super simple but super flavorful and a great winter salad!
