Bulger is a forgotten grain but is full of flavor, texture, and vitamins. It's great and one of the most popular dishes using bulger is Tubuleh. It's a jewish salad with bulger, cucumber, parsley and a lemon dressing. it's so fresh and great! But to be honest, I'm not a huge fan of parsley. So I have created my own version of this bulger salad and it's just a fresh!


1 cup bulger
2 T. fresh chopped basil
1/3 cup feta cheese
1/2 cup halved yellow cherry tomatoes
1/4 cup roasted red peppers
1 lemon
2 T. olive oil
Salt and pepper
1 cup arugula (optional)
1 hard boiled egg (optional)

The bulger will need to soak. in a pot boil three cups of water. Take it off the stove and add the bulger. Let it soak for one hour. Once time is up drain the water in a very fine strainer or towel and let it cool to room temperature.
In a bowl mix together the squeezed lemon, salt, pepper, and olive oil. Stir with a whisk.
In a lager bowl fold together the bulger, basil, feta, tomatoes, roasted red peppers. Pour the dressing on top and mix in.
Let this chill for at least an hour.
I put the bulger on top of a small bed of arugula and sliced and hard boiled egg. You could also top with a grilled chicken breast instead of the egg.

Super yummy and flavorful and healthy!
