Ore-Ida Totchos: Chili Verde Enchildadas Totchos

Who doesn't love tater tots! They are crunchy on the outside and soft in the middle and just delicious. I received Ore-Ida Tater tots free from Influenster in my Jingle Voxbobx. So, of course I made the new raving thing.
Totchos. 
Yes you heard right. 
Tater tot nachos. 
The best thing ever. 

And who doesn't love Mexican food!?! 

Chili Verde Enchildada Tatchos 


Enough for one person

1 cup of Ore-Ida Tater Tots 
3/4 cup chopped chicken breast 
1/4 cup your favorite jar of chili verde
1/2 cup shredded cheese (I used mozzarella) 
1/4 guacamole 
1 tablespoon chopped cilantro 

Pre-heat the oven and cook the tater tots according to the instructions on the back of the bag. 
While the tater tots are cooking, start sautéing the chicken in the chili verde. I used a leftover chicken breast from an already cooked rotisserie chicken from the grocery store, though you can certainly cook your own. My chili verde comes from a jar, a green chili salsa works great and again you can make your own if you like. 
When the tater tots are cooked put them on the plate you plan to serve them on and top with cheese. 
Put them back in the oven and melt the cheese under the broiler. 
When the cheese is melted, take the plate out and top with the chicken, guacamole, cilantro and any other ingredients you love. Lettuce, tomato and sour cream are great options!
