Crockpot Chicken Pho

We all love pho. 
It's broth is beyond explaining with words. 
But some of us don't live in a town where it's available. Which means we have to wait until we can get it somewhere else. 
Until now! 

I came across this crockpot pho recipe online and I was skeptical. But it turned out amazing! And it tastes almost like it does in the restaurants!

Crockpot Chicken Pho 





  1. 8 cups of Chicken Stock
  2. 2 on the bone, skinless chicken breasts (I used rotisserie chicken breasts) 
  3. 1 1/2 tablespoons of light brown sugar
  4. 2 tablespoons of fish sauce
  5. 1 cinnamon stick
  6. 10 star anise (or 5 t. of anise seed) 
  7. 1 2 1/2 inch piece fresh ginger, peeled and thinly sliced
  8. 7 cloves
  9. 6 oz of rice noodles
  10. 4-6 cups of bok choy chopped
  11. 12 oz bean sprouts (canned if they aren't available fresh) 
  12. 1 cup of fresh basil leaves (thai basil id it's available) 
  13. 2 sliced jalapeños
  14. 1 lime, quartered

  1. Add brown sugar, fish sauce, cinnamon, star anise, ginger, and cloves to chicken stock.  Place chicken breasts meat down in crockpot and then pour stock over.  Let cook in crockpot for 8-10 hrs on low. If you are using already cooked rotisserie chicken breasts DO NOT PUT THEM IN NOW! Take them off the bone and put the whole chicken carcass in the broth. This will give it extra flavor! 
  2. Remove chicken breasts from crockpot and set aside if you added them raw.  Strain everything from the broth. Add bok choy to broth and chicken if you used rotisserie, turn crockpot to high and let cook for another 30 minutes.
  3. While bok choy and chicken cooks, slice jalapeños and prep sprouts, basil, and lime for garnishing.
  4. Cook the noodles separately according to package instructions and set aside. You do not want the noodles to get soggy in the broth or soak it all up. 
  5. Add noodles to the bowl first and then ladle in broth, chicken and bok choy. Add bean sprouts, jalapeños, basil, squeeze lime, and top with sriracha, chili paste, and/or hoisen to taste.
