Lemon Tarts


As I promised here is the super simple recipe for Lemon Tarts with homed lemon curd. It's one of the more beautiful, simple recipes I've made. 

Here's the recipe (makes about 14-16)

You'll need: 
One stick of butter
4 lemons
One cup of sugar
4 eggs
tart shells

First, zest all the lemons. Here's a secret. Use a veggie peeler and peel the zest off in the big slices. Then put them in the food processor with all the sugar until it's fine and mixed together. 
Second, juice all of the lemons. 
In a mixer, creme the butter and lemon sugar. Once creamed, add one egg at a time and then mix in the lemon juice. 
Once this is combined pour it into a pot and turn the heat on low. Stir continuously until it's thickened. Don't stop stirring or you could end up with scrambled eggs. 
Once you can put your finger across the spoon and have the curd not drip you know it's ready.
Ladle the curd into your tart shells. Each shell I had held about 4 oz. 
Put in the fridge for at least 15 minutes to let them set and there you go! 


They are super delicious with a dollop of homemade whipped cream on top. 

Whip in a mixer a pint of whipping cream with a cup of powdered sugar and a bit of vanilla until you get whipped cream. Yum!
