Easy Kettle Corn

I never knew I could make kettle corn at home. I thought this was something I had to get at the fair or next craft festival.
But here we are!
It tastes straight up like kettle corn!


Super simple!

1/4 cup coconut oil (or canola if that's what you have)
1/4 cup white sugar
1/2 popcorn kernels
sprinkle of salt

Spoon 1/4 cup of coconut oil in the bottom of a deep pot. I use a large stock pot to always make any size batch of popcorn. This is a good serving for 3-4 people.

Turn the heat on medium high and when the oil has melted and gotten warm add the kernels.
When they start to sizzle, pour the sugar on top and put the lid on the pot.
Every few seconds shake the pot to keep the kernels and sugar from burning on the bottom. DOn't stop moving it every few seconds until you can't hear anymore popping.
Take it off the heat and give it one more shake.
Once you take the lid of add a sprinkle of salt and there you go.
Since it is covered in hot sugar give it a couple minutes to cool off before you take a bite.
