Almond Joy Fudgsicle

When I could eat chocolate bars, the Almond Joy was one of my favorites. The dark chocolate, the coconut, the nuts. Yum!
Not great for you so why don’t we take all this flavors and make a delicious fudgesicle!?

Now, remember that leftover coconut milk from my previous post
This is how we’re gonna use it!



Almond Joy Fudgesicle 

1 can of coconut cream (coconut cream scraped off, or use your favorite coconut milk from a carton. Just make sure it’s not full of sugar) 
1/4 cup of cocoa powder (I use carob powder because of an allergy) 
1 T. Of sweetener of your choice (I use erythritol) 
Flaked coconut and sliced almonds (optional) 

In a bowl whisk the coconut milk and cocoa powder until there are no lumps. Set aside. 
St this time if you are using the coconut flakes and or almonds, put a sprinkle of each in the bottom of your popsicle molds. 
Carefully pour the milk mixture into each popsicle molds almost to the top leaving room for each lid. (Mine made four large popsicles.)
Put the lids on each popsicle and let them set in the freezer for at least four hours. Once they are hard, you’ll have to wiggle one out carefully and enjoy! They are delicious!
