Sweet potato Skillet

Fall is the best time of year!
I love the food, the colors, the pumpkins and the clothes!
Of course, the best part is the food!

All things seeet potato are here and this Caribbean sweet potato skillet it delicious and simple. Do it all in one pan in half an hour!



Sweet Potato Skillet

4 sweet potatoes peeled and diced
1 lb. of ground turkey (or beef!)
1 large bell pepper diced
1 medium onion diced (I left this out because my husband doesn’t like it)
1/2 t. Cumin
1/4 t. Cinnamon
1/2 t. Chipotle chili powder
Salt and pepper
Coconut oil for cooking
Cilantro for garnish
Cheese for garnish (optional)
Hot sauce for garnish

In a large skillet brown the ground meat and drain off any remaining fat. Set aside.
Melt 1 teaspoon of coconut oil in the same skillet and start to cook the sweet potatoes. They cook fast so after a minute or two add the bell pepper and onion.
After the veggies have started to sweat add the spices.
Add the ground beef back in and cook till everything is soft and warmed through.

Add to a bowl and top with cilantro, cheese and/or hot sauce.

A great fall dish that is super healthy and filling!
