Lo Mein

I think we all crave chinese food every so often. Honestly, some of the take-out chinese food is salty, heavy and greasy. Yeah it tastes good but we can make some at home for cheaper and just as tasty!

Yes homemade lo mein. With spaghetti. Who would have thought?!

You need:
one box of spaghetti
your favorite stir fry veggies (I used carrots, snow peas, baby corn, broccoli and scallion)
your favorite asian sauce (I used a garlic and green onion stir fry sauce from my local grocer)
chicken tenders

So, I marinated the diced the chicken and marinated it in a third of the sauce. I then cooked it off in a pan. When it was mostly cooked I added all my veggies except the scallion and let them cook fully.

While that was happening I cooked off my spaghetti and drained it and tossed it with sesame oil.

When the veggies and chicken were cooked I added the scallion and the spaghetti into the pan and tossed it all together with about a half of the other sauce.

That's it super easy!
This is a meal you can change and add whatever veggies you like and whatever sauce you like.
One tip! If you have leftover and microwave them the next day add a bit more sauce to keep it from drying out.
